Controlled Atmosphere (CA) is a classical technology of storage, involving the creation of a sealed chamber with specific temperature, humidity, and oxygen and carbon dioxide levels. The CA technology entails storing apples in an environment with controlled concentrations of oxygen and carbon dioxide (CO2). In the regular atmosphere, nitrogen constitutes about 78%, oxygen 21%, and CO2 0.03%. In a CA chamber, the oxygen content is approximately 1.5–2.5%. This process facilitates the ripening of fruits, proving particularly beneficial for exotic and imported fruits.
The key distinction of Controlled Atmosphere (CA) refrigerators from conventional ones lies primarily in their complete sealing of storage chambers. Another important element is the presence of hermetic entry doors; the interior chamber is filled with gas and the doors are tightly pressed around the perimeter.
